Spinach Pesto Quick Recipe

I love me some spinach. It is such a super nutrient rich food. My fav thing to do: a green smoothie. My daughter calls them “Shrek Smoothies” because it is neon green and looks like we are drinking Shrek. To an almost 3 year that must be super appealing cuz the kid sucks those babies down. But this week I forgot to get mangoes at the store, and they have been out of frozen peaches for months… so I found another use for my bag-o-spinach: Spinach Pesto!

So I have always been afraid of making pesto. I do not know why, but it always seemed so fancy and like a lot of work. But I did not want to let my precious spinach go to waste, so I tackled my fear and found out that in reality, pesto-making is super duper simple. Check it out:

Spinach Pesto Ingredients

  • 4 cups washed spinach leaves, stems removed
  • 3 garlic cloves, roughly chopped
  • 3 tablespoons walnuts (pine nuts are traditional. but too difficult to find here, feel free to sub them in)
  • 1/2 teaspoon dried basil
  • 1/4-1/3 cup extra virgin olive oil
  • 1/3 cup grated Parmesan cheese
  • 1/8 tsp. salt
Spinach Pesto Making Process
Place garlic, walnuts, basil and a little oil in blender or food processor container. Cover and puree until combined. Add spinach leaves a few at a time with small amounts of oil to blender, using a rubber spatula to help to combine pureed mixture. Add Parmesan cheese and 1/8 tsp. salt. Cover and process until spinach pesto mixture is smooth. Meanwhile, cook pasta according to package directions; drain in colander. Serve with the spinach pesto sauce.
Garnish with some shaved Parm. Boom! A healthy dinner on the table in less then 15 minutes. Love it.
