Listen, I know that calling any cookie “healthy” feels contradictory, but I promise these paleo cookie balls about as healthy as cookies get. These are perfect for Christmas parties, holiday office parties, or neighborhood get togethers when you are trying to eat healthy and it feels like *everyone* around you is trying to get you to eat all the sugar ever.
1/3 cup shredded Coconut, 1/3 cup Sliced Almonds, 1/2 teaspoon Vanilla Extract, 6-8 pitted Dates, 2 Tablespoons Cocoa Powder – seriously, that’s it guys. You probably have everything in your pantry right now.
Mix in food processor. Yep, it’s that easy.
Roll into balls – this is a perfect step to get the little ones involved!
Roll in cocoa powder or chopped almonds, or drizzle with melted chocolate! (Ok, arguably the chocolate negates the “healthy” but if it is going to keep you from indulging in serious sweets at a holiday party, then maybe this is the trick that will work for you. Just saying, have a little grace on yourself.)
Paleo Cookie Bites
Prep Time: 10 Minutes Servings: 12
6-8 Dates, pitted
1/3 cup Baker’s Coconut
1/3 cup Sliced Almonds
2 Tablespoons Cocoa Powder
1/2 teaspoon Vanilla Extract
3-5 squares Semi-sweet Baker’s chocolate, melted for drizzling
*reserve additional almonds and cocoa powder for topping
Mix all ingredients, except toppings, in food processor
Roll dough into 1 Tablespoon balls
Top with a dusting of cocoa powder, roll in almonds, or drizzle with melted Baker’s chocolate
